Water kefir

A lightly fizzy, dairy-free fermented drink made by culturing sugar water with water kefir grains.

Water kefir is a fermented beverage made by adding small, translucent culture clusters called water kefir grains to a jar of sugar water, sometimes with dried fruit added for extra minerals and flavor. Over roughly one to three days at room temperature, the grains consume much of the sugar and produce a lightly tart, mildly effervescent drink.

Unlike milk kefir, water kefir grains are not dairy-based, which makes it a popular option for people avoiding dairy who still want a home fermented probiotic-style drink. After the initial ferment, many people bottle water kefir for a second fermentation with fruit or juice to build more carbonation and flavor, similar to how kombucha is often finished.

A frequent point of confusion for beginners is treating water kefir grains the same as a kombucha SCOBY, but they are structurally and biologically different cultures with different feeding needs. Water kefir grains generally prefer unrefined or mineral-rich sugar sources rather than plain white sugar alone, and they need to be fed regularly, so researching a maintenance routine before starting helps keep a culture healthy over the long run.
