Anaerobic fermentation
Fermentation that happens in the absence of oxygen, the condition most vegetable and some dairy ferments rely on.
Anaerobic fermentation refers to fermentation that takes place with little or no oxygen present, which is the environment most lactic acid bacteria prefer for converting sugars into acids efficiently. Vegetable ferments like sauerkraut and kimchi rely heavily on this principle, which is why keeping produce fully submerged under brine is such a central part of the process.
Achieving a reliably anaerobic environment at home usually comes down to a combination of tools and technique, submerging vegetables with a weight, using an airlock lid to vent gas without letting air back in, and minimizing how often a jar is opened during active fermentation. Vacuum-sealed fermentation bags are another option some fermenters use, pressing air out of a flexible bag around the vegetables.
It helps to understand that a completely oxygen-free environment is difficult to achieve perfectly at home, and that is generally fine, since most kitchen fermentation setups only need to be anaerobic enough to favor lactic acid bacteria over mold and other unwanted organisms. Brief exposure to air when checking on a ferment is normal and widely accepted as part of the process, rather than something that ruins a batch outright.
