Lacto-fermentation
Fermentation driven by lactic acid bacteria that preserves vegetables and gives sauerkraut and kimchi their tang.
Lacto-fermentation is the process behind sauerkraut, kimchi, pickles, and most vegetable ferments. Naturally occurring lactic acid bacteria, already present on fresh produce, convert sugars in the vegetables into lactic acid. As acid builds up, the environment becomes inhospitable to the bacteria that cause spoilage, which is why properly fermented vegetables can be stored for weeks in the right conditions.
The process depends on keeping vegetables submerged under salted brine, away from oxygen, so lactic acid bacteria can outcompete other microbes. Salt at the right percentage draws water out of the vegetables to help form the brine, slows down unwanted organisms, and keeps the texture firm rather than mushy. Temperature also matters, cooler rooms slow fermentation down and produce a milder flavor, while warmer rooms speed it up.
A common mistake is using too little salt or letting vegetables float above the brine line, which invites mold or a persistent white film. Another is fermenting for a fixed number of days instead of tasting along the way, since flavor development depends heavily on temperature and the specific vegetable.
